Raw Citrus Balls

Jacqueline Alwill's Raw Citrus Balls

(Makes 25: 1 Serve = 2 Balls)

Total: 220 Calories Per Serve

Ingredients:
2 ½ cups cashews
1 ½ cups shredded coconut
2tbsp raw honey or maple syrup
¼ cup lemon juice
2tsp finely grated lemon rind
¼ cup orange juice
2tsp finely grated orange rind
Desiccated coconut for rolling 

 

Instructions:

  1. Place cashews and coconut in food processor and blitz until a fine crumb forms.
  2. Add remaining ingredients to processor and blitz again until a lovely raw dough is created.
  3. Remove from food processor and using a tablespoon, measure into balls.
  4. Roll in desiccated coconut and refrigerate.
Notes:
Store in the fridge up to 2 weeks or freeze up to 1 month.
