Recipe: Smashed Avo Toast with a Twist

(Serves 2)


  • 1 ripe avocado
  • ½ cup peas, cooked and cooled  
  • Juice of ½ a lemon 
  • 1 Shine Greens sachet 
  • 1 tbsp of roughly chopped herbs of choice (dill, parsley, chives and mint all work really well)
  • 1 tsp of finely chopped preserved lemon (optional) 
  • 4 slices of multigrain sourdough 
  • Salt and pepper to taste


  1. Put the sourdough down in the toaster 
  2. Add avocado, peas and lemon juice into a bowl and mash with a fork 
  3. Stir in herbs of choice, preserved lemon (if using) and salt and pepper 
  4. Divide avocado mixture evenly over the four pieces of toast
  5. Top with more lemon juice, salt and pepper, or fresh herbs.
