(Serves 2)
Ingredients:
- 1 ripe avocado
- ½ cup peas, cooked and cooled
- Juice of ½ a lemon
- 1 Shine Greens sachet
- 1 tbsp of roughly chopped herbs of choice (dill, parsley, chives and mint all work really well)
- 1 tsp of finely chopped preserved lemon (optional)
- 4 slices of multigrain sourdough
- Salt and pepper to taste
Method:
- Put the sourdough down in the toaster
- Add avocado, peas and lemon juice into a bowl and mash with a fork
- Stir in herbs of choice, preserved lemon (if using) and salt and pepper
- Divide avocado mixture evenly over the four pieces of toast
- Top with more lemon juice, salt and pepper, or fresh herbs.
