Recipe: Cashew Pesto Pasta

There’s something so comforting about a pasta dish, especially on those nights when you want a home-cooked meal with minimal effort. A quick pasta dinner doesn’t have to be lacking in nutrition or flavour. Packing fresh basil, parsley, garlic, cashews and Shine Greens and into your food processor and mixing it through cooked pasta is about as simple and delicious as it gets.

(Serves 2)


1 cup fresh basil leaves
½ cup fresh parsley leaves
2 garlic cloves
1 Shine Greens sachet
¼ cup unsalted toasted cashew nuts
¼ cup grated parmesan cheese or nutritional yeast
¼ cup extra virgin olive oil
Salt and pepper to taste
Pasta of choice, cooked al dente with ⅓ cup of pasta water saved


In a food processor, place cashew nuts and garlic cloves and pulse until roughly chopped.
Add basil and parsley leaves, parmesan cheese or nutritional yeast, Shine Greens, and salt and pepper. Blend on low speed and slowly pour in olive oil until the mixture forms a paste-like consistency.
Place cooked pasta in a large saucepan on low heat and add pesto and reserved pasta water. Stir occasionally for 5 minutes or until water is absorbed.
Serve immediately with extra parmesan and more fresh chopped parsley.
